Ingredients
  

For the sandwich
  • 2 slices slices of bread Use white, sourdough, or Italian bread for different textures.
  • 1 tablespoon soft butter For spreading on the bread.
  • 1 cup shredded mozzarella Mozzarella is preferred for that classic cheese pull.
  • 10-15 slices pepperoni Regular slices work; blot grease if necessary.
  • 1-2 tablespoons pizza sauce Use a thicker sauce to prevent sogginess.

Method
 

Preparation
  1. Lay out 2 slices of bread and spread soft butter on one side of each slice.
  2. Flip the slices over and on the inside of one slice, add a layer of shredded mozzarella.
  3. Top with 10 to 15 slices of pepperoni, followed by 1 to 2 tablespoons of pizza sauce.
  4. Add another small handful of mozzarella and close the sandwich with the other slice of bread, butter side facing out.
Cooking
  1. Heat a skillet on medium-low. Cook the sandwich for 3 to 5 minutes per side, pressing gently with a spatula until golden and cheese is melted.
  2. Let it rest for 1 minute before slicing and enjoy while warm and gooey.

Notes

Use medium-low heat to avoid burning. Covering the pan for 30 seconds helps melt the cheese without overbrowning the bread.
