Preparation
- Crush the Oreos by placing them in a zip top bag and using a rolling pin to crush them to a mix of big chunks and smaller crumbs.
- Crush the peppermint candies or candy canes by placing them in a bag and smacking them until you have tiny bits and a few bigger pieces.
Melting Chocolate
- In a microwave safe bowl, melt the white chocolate chips with coconut oil in 20 to 25 second bursts, stirring each time until smooth.
- Once smooth, stir in a pinch of salt and the optional peppermint extract.
Mixing
- Pour the melted white chocolate over the crushed Oreos and mix until well coated and glossy.
- Fold in about three quarters of the crushed peppermint candy, reserving the rest for topping.
Shaping and Chilling
- Spoon mounds onto a parchment paper lined sheet pan, or spread the mixture out like bark.
- Sprinkle the reserved crushed peppermint on top and press lightly to adhere.
- Chill in the fridge for 20 to 30 minutes until firm.
Notes
Keep the treat in an airtight container. It can stay at room temperature for 5-7 days or in the fridge if warmer. It can be frozen for up to 2 months. For best texture, serve cold.
