Pecan Sandies

Ingredients
  

Cookie Base
  • 1 cup unsalted butter, softened Real butter is recommended for the best flavor.
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour Do not overmix once flour is added.
  • 1/2 teaspoon salt
Pecan Addition
  • 1 cup pecans, chopped Toast them for added flavor, if preferred.
Optional
  • to taste extra powdered sugar for dusting For a classic look.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
  2. Cream the butter and both sugars together until smooth and fluffy, about 2 minutes.
  3. Mix in the egg yolk and vanilla extract.
  4. Add flour and salt, stirring gently until no dry flour remains.
  5. Fold in the chopped pecans.
  6. Cover the bowl and chill the dough for 30 to 60 minutes.
  7. Scoop or roll the dough into 1 inch balls and place on the baking sheet with space between them.
Baking
  1. Bake for 14 to 18 minutes, until the bottoms are just barely turning golden.
  2. Cool on the pan for 5 minutes before moving to a wire rack.
  3. Dust with powdered sugar if desired after cooling.

Notes

These cookies travel well and make for great gifts. Ensure they are fully cool before packaging. Chilling the dough helps with the cookie shape during baking.
