  • 1 stick Butter Salted or unsalted works, salted gives an extra balance
  • 1 cup Butterscotch chips Provides cozy sweetness
  • 1 cup Peanut butter Creamy is classic
  • 2 cups Mini marshmallows Mini works best for even mixing
Optional Add-Ins
  • 1 pinch Salt Optional for flavor balance
  • 1 tsp Vanilla extract Optional for extra flavor

Method
 

Preparation
  1. Line an 8x8 pan with parchment paper or lightly grease it.
  2. In a medium pot on low heat, melt butter and butterscotch chips together, stirring often.
  3. Once smooth, stir in peanut butter until glossy and uniform.
  4. Turn off the heat, let cool for a minute, then gently fold in mini marshmallows.
  5. Press mixture into the pan with buttered hands or a greased spatula.
  6. Chill until set (about 45-60 minutes), then slice into squares.

Notes

If short on time, freeze the pan for 15 minutes, then transfer to the fridge. Keep heat low to avoid scorching the butterscotch chips.
