Ingredients

Pudding Layer
  • 1 pack instant vanilla pudding mix Or use banana cream pudding mix for more banana flavor
  • 2 cups cold milk Use cold to ensure pudding sets properly
  • 1 cup creamy peanut butter Soften slightly in the microwave if too thick
  • 1 cup whipped topping or freshly whipped cream Fold in gently to keep it light
Banana Layer
  • 3 medium ripe bananas Slice right before layering to keep fresh
Cookie Layer
  • 2 cups vanilla wafers Classic choice - can also use butter cookies, graham crackers, or chocolate sandwich cookies

Method

Preparation
  1. In a mixing bowl, whisk the instant pudding mix with cold milk until smooth.
  2. Gently stir in the softened peanut butter until fully incorporated.
  3. Fold in whipped topping or freshly whipped cream until combined.
Layering
  1. In a serving dish, place a layer of vanilla wafers at the bottom.
  2. Add a layer of sliced bananas on top of the wafers.
  3. Spread a layer of the peanut butter pudding mixture over the bananas.
  4. Repeat the layers until all ingredients are used, finishing with the pudding on top.
Chilling
  1. Cover the dish and refrigerate for at least 4 hours to allow it to set and flavors to meld.

Notes

Make it ahead of time for a better flavor. If concerned about browning bananas, add a fresh layer shortly before serving.
