Ingredients
Method
Preparation
- Dice peaches, chop bell pepper and onion, mince jalapeno and garlic.
Cooking
- In a big pot, add peaches, bell pepper, onion, jalapeno, garlic, vinegar, lime juice, salt, and cumin. Stir it together.
- Bring to a gentle boil, then lower to a steady simmer. Cook for about 15 to 25 minutes, stirring often, until it thickens but peaches still hold shape.
- Taste carefully and adjust seasoning with more salt, honey, or lime juice as needed.
Serving or Canning
- For fresh salsa, cool down and stir in cilantro right before serving.
- For canning, ladle hot salsa into hot jars, leaving a bit of space at the top, wipe rims, add lids, and process in a water bath canner.
Notes
This salsa is perfect for snacking or canning. Store sealed jars in a cool, dark place. After opening, refrigerate and use within a week.
