  • 2 cups heavy cream For richness and silky texture.
  • 1 cup whole milk To keep it light.
  • 3/4 cup sugar To sweeten.
  • 1 tablespoon gelatin (unflavored) Helps it set; should be bloomed.
  • 1 teaspoon vanilla extract For flavor; can use paste or a bean.
  • 1 pinch salt Enhances flavor.

Method
 

Preparation
  1. Pour about 3 tablespoons of cold water into a small bowl. Sprinkle the gelatin over the top and let it sit for 5 to 10 minutes until it looks spongey.
  2. In a saucepan, add heavy cream, milk, sugar, and a pinch of salt. Warm it over medium low heat, stirring until the sugar dissolves. Do not let it boil.
  3. Take the pan off the heat. Add the bloomed gelatin and stir until fully dissolved, about 1 minute.
  4. Stir in vanilla.
  5. Pour into small cups, ramekins, or lightly greased molds. Let them cool on the counter for about 15 minutes, then cover and refrigerate until set, usually 4 to 6 hours.

Notes

Best made a day in advance for optimal texture. Store covered in the fridge, away from strong smells. Can be topped with berries, jam, caramel, or chocolate shavings for variation.
