One Pot Vegetable Pasta

Ingredients
  

Flavor Base
  • 1 tablespoon olive oil For sautéing vegetables
  • 1 medium onion, chopped For the flavor base
  • 3 cloves garlic, minced For flavor
Vegetables & Seasonings
  • 1 cup bell pepper, chopped Sturdy vegetable
  • 1 cup carrots, thinly sliced Sturdy vegetable
  • 1 teaspoon salt To taste
  • 1 teaspoon black pepper To taste
  • 1 tablespoon Italian seasoning For flavor
  • 1/4 teaspoon red pepper flakes Optional for a kick
Main Ingredients
  • 1 can crushed tomatoes Or marinara sauce
  • 3 cups vegetable broth Liquid for cooking
  • 8 ounces dry pasta Short shape recommended
Quick Cooking Vegetables
  • 1 cup zucchini, sliced Add at the end of cooking
  • 2 cups spinach Add at the end of cooking
  • 1 cup frozen peas Add at the end of cooking
Finishing Touches
  • 1/2 cup parmesan cheese, grated Optional for extra creaminess
  • 1 tablespoon butter Optional for extra creaminess

Method
 

Preparing the Base
  1. Set a large pot or deep skillet over medium heat.
  2. Add olive oil and chopped onion, cooking for 2 to 3 minutes until softened.
  3. Add minced garlic and stir for about 30 seconds.
Cooking the Vegetables
  1. Add sturdier vegetables like bell pepper and carrots.
  2. Sprinkle in salt, pepper, and Italian seasoning, and add red pepper flakes if desired.
Adding Pasta and Liquids
  1. Pour in crushed tomatoes or marinara and vegetable broth.
  2. Add dry pasta and stir to prevent sticking.
  3. Bring to a gentle boil and lower to a simmer.
Simmer and Finish
  1. Simmer for 10 to 12 minutes, stirring every minute or two.
  2. In the last few minutes, add zucchini, spinach, and peas.
  3. Turn off the heat, and stir in parmesan cheese or butter for creaminess.

Notes

This recipe is very flexible; feel free to use any vegetables you have on hand. Adjust the liquid ratio based on the pasta shape and vegetables used. Can be made gluten-free with gluten-free pasta.
