Preparation
- Pick your pasta, enough for everyone (about 2 cups dry).
- Chop a few cups of mixed vegetables - think bell peppers, mushrooms, spinach, or whatever you fancy.
Cooking
- Pop everything in one big pot: pasta, vegetables, garlic, and a sprinkle of salt and pepper.
- Pour in vegetable broth just to cover the pasta.
- Bring to a boil, then simmer with the lid, stirring occasionally so nothing sticks.
- After about 12-15 minutes, the pasta should be tender and the liquid mostly soaked in.
- Toss in a hefty handful of grated parmesan or a squeeze of lemon if you like zing.
Serving
- Serve straight from the pot for a rustic presentation.
Notes
This dish is great for using up leftovers. Don’t hesitate to toss in any leftover roasted veggies, half a can of beans, or rotisserie chicken.
