Main Ingredients
  • 2 cups cooked chicken rotisserie is perfect
  • 1 package gnocchi (about 16 oz, shelf-stable or refrigerated)
  • 2 cups mixed veggies (frozen is totally fine)
  • 2 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup milk or half-and-half (for super creamy sauce)
  • 2 tablespoons flour
  • 1 teaspoon Italian seasoning (or just whatever herbs you love)
  • Salt and pepper to taste
  • Fresh parsley or parmesan for topping (optional but recommended)

Preparation
  1. In a large pot, melt butter over medium heat. Toss in the onion, cooking until it’s soft.
  2. Add garlic, stir, then sprinkle in flour to make a thick paste for 1-2 minutes.
  3. Whisk in chicken broth and milk, stirring to avoid lumps. Bring to a bubble.
Cooking
  1. Add mixed veggies, gnocchi, cooked chicken, Italian seasoning, salt, and pepper.
  2. Let simmer for about 8-10 minutes, uncovered, stirring occasionally.
  3. Taste and adjust seasoning if needed. Top with parsley or parmesan.
  4. Scoop into bowls and serve hot for maximum comfort.

Notes

Stir occasionally to prevent gnocchi from sticking. Leftovers can be stored in a tightly sealed container in the fridge; add a splash of broth or milk when reheating. Freezing is an option, but gnocchi may become mushy.
