- In a large pot, melt butter over medium heat. Toss in the onion, cooking until it’s soft.
- Add garlic, stir, then sprinkle in flour to make a thick paste for 1-2 minutes.
- Whisk in chicken broth and milk, stirring to avoid lumps. Bring to a bubble.
Cooking
- Add mixed veggies, gnocchi, cooked chicken, Italian seasoning, salt, and pepper.
- Let simmer for about 8-10 minutes, uncovered, stirring occasionally.
- Taste and adjust seasoning if needed. Top with parsley or parmesan.
- Scoop into bowls and serve hot for maximum comfort.
Notes
Stir occasionally to prevent gnocchi from sticking. Leftovers can be stored in a tightly sealed container in the fridge; add a splash of broth or milk when reheating. Freezing is an option, but gnocchi may become mushy.
