- Melt butter in your pot on medium heat. Add garlic and stir until it smells amazing, about 30 to 60 seconds.
- Add broth, milk, and a good pinch of salt and pepper. Bring it to a gentle simmer.
- Add pasta. Press it down so it is mostly covered. Stir a few times in the first couple minutes.
- Simmer uncovered for 10 to 12 minutes, stirring now and then, until pasta is tender and the liquid is reduced.
- Turn heat off. Stir in parmesan until smooth. Taste and adjust salt and pepper.
- Add any extras like spinach. It wilts fast from the heat of the pasta.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 to 4 days. Reheat with a splash of liquid to maintain creaminess.
