One Pot Creamy Garlic Pasta

Ingredients

  • 8 to 10 ounces pasta, spaghetti, fettuccine, or linguine
  • 4 to 6 cloves garlic, minced Yes, it's a lot and yes it's worth it.
  • 2 tablespoons butter or olive oil, or half and half
  • 3 cups chicken broth or veggie broth
  • 1 cup milk or half and half
  • 3/4 cup grated parmesan, plus more to finish
  • Salt and black pepper to taste Optional: pinch of red pepper flakes, Italian seasoning, or a squeeze of lemon.
  • Optional: spinach, peas, mushrooms, or cooked chicken

Method
 

Cooking Instructions
  1. Melt butter in your pot on medium heat. Add garlic and stir until it smells amazing, about 30 to 60 seconds.
  2. Add broth, milk, and a good pinch of salt and pepper. Bring it to a gentle simmer.
  3. Add pasta. Press it down so it is mostly covered. Stir a few times in the first couple minutes.
  4. Simmer uncovered for 10 to 12 minutes, stirring now and then, until pasta is tender and the liquid is reduced.
  5. Turn heat off. Stir in parmesan until smooth. Taste and adjust salt and pepper.
  6. Add any extras like spinach. It wilts fast from the heat of the pasta.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 to 4 days. Reheat with a splash of liquid to maintain creaminess.
