  • 1 lb chicken breasts Can substitute with chicken thighs for a juicier flavor.
  • 1 cup orzo pasta
  • 4 cups chicken broth Use low-sodium if preferred.
  • 2 cloves garlic Minced.
  • 1 medium onion Diced.
  • 2 cups fresh spinach Can substitute with peas or other veggies.
  • 1 tablespoon lemon juice Add lemon zest for extra flavor if desired.

Method
 

Preparation
  1. Brown the chicken in a large skillet, avoiding crowding the pan.
  2. Remove the chicken and sauté garlic and onion until fragrant and translucent.
Cooking
  1. Add the orzo to the skillet and toast lightly.
  2. Pour in the chicken broth and nestle the chicken back in.
  3. Simmer until the orzo is cooked and creamy.
  4. Stir in the spinach (or others) and lemon juice at the end before serving.

Notes

Great for leftovers! Store in an airtight container. Reheat with a splash of broth or water if it thickens.
