Main Ingredients
  • 1 pound Chicken breasts or thighs (or leftover rotisserie) Cut into bite-sized pieces.
  • 12 ounces Fettucine or pasta of choice Use any pasta you have on hand.
  • 4 cups Chicken broth Can use vegetable broth or water with a bouillon cube.
  • 1 cup Milk 2% works fine.
  • 1/2 cup Cream Just a splash for creaminess.
  • 1 cup Parmesan cheese Fresh is best for better melting.
  • 1 clove Garlic Adjust amount based on preference.
  • to taste Salt and pepper Adjust based on personal preference.
  • 1 tablespoon Oil or butter For browning the chicken.
Optional Add-ins
  • 1 cup Chopped spinach For added nutrition.
  • 1 cup Peas Add if desired.

Method
 

Preparation
  1. Cut the chicken into bite-sized pieces.
  2. In a large pot, heat oil and add the chicken, browning until golden.
  3. Add the minced garlic and optional onion, sautéing for additional flavor.
Cooking
  1. Add uncooked pasta, chicken broth, and milk to the pot.
  2. Bring everything to a simmer, stirring occasionally.
  3. Once pasta is soft, stir in the cream and Parmesan cheese.
  4. Taste and adjust seasoning with salt, pepper, and any additional herbs.

Notes

Stir regularly while cooking to prevent sticking. Add more liquid if too thick and let simmer with the lid off if too runny. Fresh herbs can enhance flavor at the end.
