  • 4 pieces Boneless skinless chicken breasts or thighs Thighs are more forgiving and stay juicy.
  • 1 cup Jarred salsa Use medium heat salsa or homemade if preferred.
  • 1 tablespoon Olive oil or avocado oil For searing the chicken.
  • 1 squeeze Lime juice Optional, adds brightness at the end.
  • Shredded cheese (optional) Use cheddar, Monterey Jack, or pepper jack.
Seasonings
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • to taste Salt and pepper
Optional Extras
  • Black beans, corn, bell peppers, onions, zucchini, or spinach Add for extra flavor and nutrition.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry and season both sides with salt, pepper, cumin, chili powder, and garlic powder.
  3. Heat a tablespoon of oil in an oven-safe skillet on medium-high heat.
  4. Sear the chicken for about 2 minutes per side until lightly browned.
  5. Pour salsa over the chicken until it is nicely covered, and scatter any optional ingredients around.
  6. Move the skillet to the oven and bake for about 18 to 25 minutes, depending on thickness, until the chicken reaches 165°F (75°C) in the thickest part.
  7. Optional: Sprinkle cheese over the chicken in the last 3 to 5 minutes of baking.
  8. Finish with a squeeze of lime juice and top with any preferred toppings like cilantro or green onions.

Notes

If chicken breasts are thick, slice them horizontally for even cooking. Serve over rice or low-carb options, or add vegetables to customize the dish. Store leftovers in a sealed container for up to 4 days.
