Ingredients

Primary Ingredients
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts optional, such as pecans

Method

Preparation
  1. In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches a soft-ball stage (234°F or 112°C).
  2. While the sugar mixture is cooking, beat the egg whites in a separate bowl until stiff peaks form.
  3. Once the sugar mixture is ready, slowly pour it into the beaten egg whites while continuously beating until the mixture holds its shape and is glossy.
Finishing
  1. Stir in the vanilla extract and nuts if using.
  2. Drop spoonfuls of the mixture onto wax paper or a greased baking sheet.
  3. Allow the divinity to cool and set for several hours before serving or packaging.

Notes

Store divinity in an airtight container in a cool, dry place. Avoid humid conditions for best results. Variations can include different flavor extracts or nuts.
