Ingredients

Main Ingredients
  • 2 cups old fashioned oats For the best chewy texture.
  • 1 cup creamy peanut butter No-stir creamy is easiest.
  • 1/3 cup honey or maple syrup Either will work for binding.
  • 1 teaspoon vanilla extract Optional, for flavor.
  • 1 pinch salt To enhance flavors.
Mix-ins (optional)
  • 1/2 cup mini chocolate chips For added sweetness.

Method

Preparation
  1. In a medium bowl, stir together oats, peanut butter, honey (or maple syrup), vanilla, and a pinch of salt.
  2. Mix until the dough looks thick and evenly combined. It should hold together when you press it between your fingers.
  3. Fold in your mix-ins, such as mini chocolate chips.
  4. If the mixture feels too sticky, chill it for 10 to 15 minutes. If it feels too dry, add a spoonful of peanut butter or a drizzle of honey.
Formation
  1. Scoop and roll into bite-size balls, aiming for about 1 tablespoon each.
  2. Chill in the fridge for at least 30 minutes before eating for a firmer texture.

Notes

Store in a sealed container in the fridge for up to 1 week or freeze for 2 to 3 months. Enjoy as a quick and healthy snack.
