Ingredients
  

For the Filling
  • 400 g cottage cheese Full fat or low fat works; drain if watery.
  • 200 g cream cheese Use room temperature for easier blending.
  • 1/4 cup honey or sugar Honey adds softness; sugar provides classic sweetness.
  • 2 tbsp lemon juice Balances the sweetness and enhances flavor.
  • 1 tsp vanilla extract Essential for a dessert flavor.
For the Crust
  • 200 g graham crackers Or substitute with crushed digestive biscuits, vanilla wafers, or chocolate cookies.
  • 1/2 cup melted butter Used to bind the crust together.
  • a pinch salt Improves sweetness balance.

Method
 

Preparation
  1. Crush the graham crackers until they resemble sand and mix with melted butter and pinch of salt.
  2. Press the mixture firmly into the bottom of a springform pan or pie dish and refrigerate to firm it up.
  3. In a blender, combine cottage cheese, cream cheese, honey or sugar, lemon juice, and vanilla. Blend until completely smooth and glossy. Adjust sweetness as needed.
Assembly and Chilling
  1. Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.
  2. Cover and chill for at least 6 hours, preferably overnight, to allow the mixture to set.

Notes

For best results: ensure the cottage cheese is blended very smoothly, chill longer for cleaner slices, and add toppings just before serving to prevent moisture.
