Ingredients

  • 2 cups Chocolate cookie crumbs (Oreo style)
  • 6-7 tablespoons Melted butter To hold the crust together
For the filling
  • 16 ounces Cream cheese, softened Should be at room temperature to blend smoothly
  • 3/4-1 cup Powdered sugar Adjust according to desired sweetness
  • 1/3 cup Unsweetened cocoa powder For deep chocolate flavor
  • 1-2 teaspoons Vanilla extract To enhance flavor
  • 2 cups Whipped topping or homemade whipped cream Makes it fluffy and sliceable
For the topping
  • 1 can Cherry pie filling (around 21 ounces) For the top

Method
 

Preparation of the Crust
  1. Mix chocolate cookie crumbs with melted butter until it looks like wet sand.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan.
  3. Refrigerate the crust while making the filling.
Making the Filling
  1. In a large bowl, beat softened cream cheese until smooth.
  2. Add powdered sugar, cocoa powder, and vanilla extract, and mix until creamy with no lumps.
  3. Gently fold in the whipped topping until the mixture is light and fluffy.
Assembly and Chilling
  1. Spoon the chocolate cheesecake filling onto the crust and smooth the top.
  2. Cover and chill for at least 6 hours, preferably overnight.
  3. Spread the cherry pie filling over the top shortly before serving.

Notes

Ensure cream cheese is softened to avoid lumps. Chill time is crucial. For extra chocolate flavor, consider adding mini chocolate chips to the filling or drizzling chocolate on top before serving.
