Nicoise Salad

Ingredients
  

Salad Ingredients
  • 1 can canned tuna in olive oil Good quality tuna is recommended.
  • 1 pound baby potatoes Hold their shape and feel hearty.
  • 8 ounces green beans Blanch until bright and tender.
  • 2 large eggs Soft-boiled is preferred.
  • 1 cup cherry tomatoes Halved or chopped ripe tomatoes work.
  • 1/2 cup Nicoise olives Any good briny olive is fine.
  • 4 cups mixed greens Romaine and arugula are a good combo.
Dressing
  • 1/4 cup olive oil Extra virgin preferred.
  • 1 tablespoon Dijon mustard Basic flavoring for the dressing.
  • 2 tablespoons lemon juice or red wine vinegar Adds acidity to the dressing.
  • to taste salt and pepper Season to preference.
  • 1 clove grated garlic Optional for flavor.

Method
 

Preparation
  1. Boil the potatoes in salted water until easily pierced with a knife, about 15 minutes.
  2. Add the green beans to the pot in the last 3 minutes of cooking, then remove and cool them under cold water.
  3. For the eggs, boil them for about 7 minutes, then cool in cold water before peeling.
Dressing
  1. In a small jar or bowl, combine olive oil, Dijon mustard, lemon juice or vinegar, salt, and pepper. Shake or whisk until blended.
Assembly
  1. On a large plate, spread the mixed greens.
  2. Arrange the potatoes, green beans, tomatoes, olives, eggs, and tuna in sections.
  3. Drizzle with the dressing and finish with cracked pepper.

Notes

You can prep ingredients in advance and assemble the salad right before serving to maintain freshness. Keep dressing separate until ready to serve.
