Ingredients
  

Muffuletta Olive Salad
  • 1 cup Green olives, chopped Use a mix with black olives for better flavor.
  • 1 cup Black olives, chopped
  • 1/2 cup Giardiniera or pickled mixed vegetables, chopped
  • 1/2 cup Roasted red peppers or pimentos, chopped
  • 2 tablespoons Capers (optional) Adds extra brininess.
  • 2 cloves Garlic, minced
  • 1/4 cup Olive oil
  • 1 tablespoon Red wine vinegar, splash Adjust to taste.
  • 1 teaspoon Italian seasoning or oregano
  • 1 teaspoon Black pepper
Sandwich Assembly
  • 4 slices Provolone or mozzarella cheese Used as a barrier to prevent sogginess.
  • 1 pound Salami Use a mix of cured meats.
  • 1 pound Ham
  • 1 pound Mortadella
  • 1 loaf Soft round Italian bread Ciabatta is a good substitute.

Method
 

Prepare Muffuletta Olive Salad
  1. Chop the green and black olives, giardiniera, roasted red peppers, and garlic.
  2. In a bowl, combine the chopped olives, vegetables, capers, olive oil, red wine vinegar, Italian seasoning, and black pepper.
  3. Let the salad sit for at least 30 minutes to allow the flavors to meld.
Assemble the Sandwich
  1. Slice the Italian bread in half horizontally.
  2. Place slices of cheese on the bottom half of the bread.
  3. Layer salami, ham, and mortadella on top of the cheese.
  4. Spoon a generous amount of olive salad onto the meats.
  5. Close the sandwich and let it sit for a few minutes before slicing.

Notes

For a lighter option, try using more vegetables or make it meatless with provolone and veggies. Store the olive salad in an airtight container in the fridge for 5 to 7 days.
