  • 1 lb Ground beef Lean is easier, but any works if you drain extra fat.
  • 1 medium Eggplant Can substitute with 2 small eggplants.
  • 1 medium Onion Chopped.
  • 2 cloves Garlic Minced.
  • 2 tbsp Tomato paste
  • 15 oz Crushed tomatoes Or passata.
  • 1 cup Long grain rice Basmati or jasmine.
  • 2 cups Broth Beef broth or chicken broth.
  • 2 tbsp Olive oil
  • 1 pinch Cinnamon It's essential for flavor.
  • 1 tbsp Dried oregano
  • 1 tsp Salt To taste.
  • 1 tsp Black pepper To taste.
  • optional Grated cheese For topping.

Method
 

Preparation
  1. Heat olive oil in a pot and cook chopped onion until it softens.
  2. Add ground beef, breaking it up until mostly browned.
  3. Stir in minced garlic and tomato paste, cooking for an additional minute.
  4. Add crushed tomatoes, oregano, salt, pepper, and pinch of cinnamon, allowing it to bubble for a few minutes until thickened.
  5. Dice the eggplant and sprinkle with salt, letting it sit if time allows. Add it to the pot once the meat sauce is thick.
Cooking
  1. Stir in long grain rice and broth, pressing the rice under the liquid.
  2. Cover the pot and let it simmer, avoiding peeking, until the rice is cooked.
  3. Once the rice is tender, turn off the heat and let the pot sit for 5-10 minutes.
Serving
  1. Top with grated cheese or a mixture of Greek yogurt, garlic, and lemon if desired.
  2. Serve with a side of salad, cucumbers, olives, or warm pita.

Notes

Keep the heat steady while simmering. For a creamier topping, mix Greek yogurt with garlic and lemon. This dish reheats well; just add a splash of broth when warming up.
