  • 1 cup Old fashioned oats For hearty cookie texture
  • 1 cup Peanut butter Creamy is easiest to mix
  • 1/2 cup Honey or maple syrup For sweetness and stickiness
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini candies (like M&Ms) Plus extra for rolling, if desired
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract Optional, for extra flavor

Method
 

Preparation
  1. In a mixing bowl, stir together the peanut butter and honey until smooth and glossy.
  2. Mix in the old fashioned oats, salt, and vanilla extract.
  3. Fold in the mini chocolate chips and mini candies.
  4. If the dough feels too soft, chill in the fridge for 10 minutes until it firms up.
  5. Roll the mixture into small balls, about one tablespoon each.

Notes

Store in an airtight container in the fridge for up to one week. For longer storage, freeze them for up to two months. Let them sit at room temperature for 5 minutes before serving for best texture.
