Ingredients
  

Cheesecake Filling
  • 16 oz cream cheese, room temperature Full fat works best for texture.
  • 1 cup sour cream or heavy cream For an extra smooth bite.
  • 3 large eggs Room temperature.
  • 1 tsp mint extract Use mint extract for a classic ice cream flavor.
  • 1 cup chocolate chips or chopped chocolate Mini chips spread evenly; chopped chocolate gives melty pockets.
Crust
  • 1.5 cups chocolate cookie crumbs Or crust of choice.
  • 0.5 cup butter, melted For binding the crust.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. Mix the chocolate cookie crumbs with melted butter until combined.
  3. Press the crumb mixture into the bottom of a springform pan to form the crust.
Cheesecake Filling
  1. In a large mixing bowl, beat the room temperature cream cheese until smooth.
  2. Add the sour cream (or heavy cream) and mint extract, and mix until combined.
  3. Add the eggs one at a time, mixing gently after each addition.
  4. Fold in the chocolate chips or chopped chocolate.
Baking
  1. Pour the cheesecake filling over the prepared crust.
  2. Bake for about 60 minutes, or until the edges are set and the center has a slight jiggle.
  3. Once done, turn the oven off, crack the door and let it cool in the oven for 30 minutes.
  4. Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 6 hours or overnight.

Notes

Chill the cheesecake thoroughly; refrigerating overnight enhances flavor and texture. Use a gentle bake to avoid cracking.
