Main Ingredients
  • 4 cups Cooked shredded chicken (rotisserie works great) You can also use any cooked shredded chicken.
  • 8 oz Cream cheese, softened Microwave for 10-15 seconds if cold.
  • 1 cup Sour cream Can be substituted with more cream cheese.
  • 1 cup Cottage cheese (or ricotta if that is what you have) Ricotta can be used as a substitute.
  • 2 cups Shredded cheddar (or a blend) Feel free to use a cheese blend.
Seasonings
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Salt
  • 1/2 tsp Pepper
Topping
  • 1 cup Crushed buttery crackers
  • 1/4 cup Melted butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Lightly grease a baking dish (9×13 for larger servings, 8×8 for smaller servings).
  2. In a large bowl, mix cream cheese, sour cream, cottage cheese, and half of the shredded cheese. Season with garlic powder, onion powder, salt, and pepper. Stir until smooth.
  3. Fold in the shredded chicken, ensuring it is coated without overmixing.
  4. Spread the mixture into the prepared baking dish and sprinkle the remaining cheese on top.
  5. In a separate bowl, mix the crushed crackers with melted butter and scatter over the casserole.
  6. Bake until bubbly and golden, about 25 to 35 minutes. Let rest for 10 minutes before serving.

Notes

This casserole can be made ahead of time by assembling the filling and topping it just before baking. It reheats well and can also be frozen, though the texture may change slightly.
