Marinated Cucumbers, Onions, and Tomatoes

Ingredients
  

Vegetables
  • 2 large cucumbers, sliced Peeled or unpeeled, your choice.
  • 2 cups tomatoes, chopped Any kind, but ripe is preferred.
  • 1 medium onion, thinly sliced Red or sweet onion is great.
Marinade
  • 1/2 cup vinegar White or apple cider vinegar.
  • 1/3 cup water
  • 2-3 tablespoons sugar Adjust to taste.
  • 1-1.5 teaspoons salt Start with 1 teaspoon and adjust after chilling.
  • 1/2 teaspoon black pepper
  • pinch dried dill or fresh dill, chopped Optional.

Method
 

Preparation
  1. Slice the cucumbers and onions. Keep cucumbers fairly thin for better marinade absorption.
  2. Chop the tomatoes, noting that juicy tomatoes will thin the marinade.
Marinade Preparation
  1. Mix the marinade in a bowl or large measuring cup by combining vinegar, water, sugar, salt, and pepper. Stir until sugar mostly dissolves.
Combine and Chill
  1. Toss the sliced vegetables in a large bowl. Pour the marinade over them and toss gently to combine.
  2. Cover and refrigerate for at least 1 hour, preferably 2-4 hours. Stir once or twice if possible while chilling.

Notes

Use crisp cucumbers for best texture. Adjust salt to taste after chilling. Avoid over-marinating to prevent sogginess. Store in a covered container in the fridge for 2-3 days for optimal freshness.
