Preparation
- Preheat your oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
- Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
- In another bowl, cream the softened butter and brown sugar until fluffy and lighter in color, about 1 to 2 minutes.
- Beat in the egg, then mix in maple syrup and vanilla.
- Stir in dry ingredients until you do not see streaks of flour. Do not overmix.
- Fold in chopped pecans.
- Scoop dough into balls, about 1 and a half tablespoons each, and place them 2 inches apart on the baking sheets.
Baking
- Bake for 9 to 11 minutes until the edges look set but the centers still look a little soft.
- Cool on the pan for 5 minutes, then move to a rack to cool completely.
Notes
For perfect texture, do not overbake. Chill the dough for thicker cookies, and consider tweaks like adding chocolate chips or browned butter for variations.
