Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in a bowl.
  3. In another bowl, cream the softened butter and brown sugar until fluffy and lighter in color, about 1 to 2 minutes.
  4. Beat in the egg, then mix in maple syrup and vanilla.
  5. Stir in dry ingredients until you do not see streaks of flour. Do not overmix.
  6. Fold in chopped pecans.
  7. Scoop dough into balls, about 1 and a half tablespoons each, and place them 2 inches apart on the baking sheets.
Baking
  1. Bake for 9 to 11 minutes until the edges look set but the centers still look a little soft.
  2. Cool on the pan for 5 minutes, then move to a rack to cool completely.

Notes

For perfect texture, do not overbake. Chill the dough for thicker cookies, and consider tweaks like adding chocolate chips or browned butter for variations.
