  • 2 cups shredded cooked chicken May use shredded rotisserie chicken.
  • 4 cups shredded cabbage Any variety: green, napa, red or slaw mix.
  • 1 can mandarin oranges Drain well before adding.
  • 2 green onions sliced Adds a fresh bite.
  • 1/4 cup fresh cilantro Optional, can be omitted.
  • 1 cup crunchy toppings Wonton strips, toasted almonds, or sesame seeds.
Orange Ginger Dressing
  • 1 tablespoon soy sauce Use tamari for gluten-free.
  • 1/4 cup orange juice Canned mandarin orange juice can be used.
  • 2 tablespoons rice vinegar
  • 1 spoon honey or sugar
  • 1 teaspoon grated fresh ginger Or ginger paste.
  • 1 clove garlic Minced or use garlic powder.
  • 1 tablespoon toasted sesame oil A small amount adds flavor.
  • 2 tablespoons neutral oil Like avocado or canola.

Method
 

Preparation
  1. Start by making the orange ginger dressing. Combine all dressing ingredients in a jar and shake well.
  2. Shred or chop the cooked chicken.
  3. Slice the cabbage and any extra crunchy vegetables you are using.
  4. Add the mandarin oranges and chopped green onions to the bowl.
  5. Right before serving, toss the salad with the dressing, then finish with crunchy toppings.

Notes

For best results, store toppings separately until serving. This salad can be prepped in advance, but dress just before eating to maintain crunchiness.
