- Measure Rice Chex cereal into a large bowl.
- Melt white chocolate slowly in a microwave, stirring frequently to avoid overheating.
- Stir in vanilla and peanut butter if using, until smooth.
- Pour the melted mixture over the Chex cereal and gently fold until coated.
- Transfer the coated cereal to a zip-top bag with powdered sugar, seal, and shake to coat evenly.
- Pour the mixture back into the bowl, let cool for a few minutes.
- Fold in Lucky Charms cereal carefully to keep marshmallows intact.
