Preparation
- Preheat the oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- In a large bowl, mix together the ground beef, diced onion, minced garlic, eggs, bread crumbs, milk, salt, pepper, and smoked paprika until just combined; do not overwork.
- Press the meat mixture into the bottom of the prepared baking dish in an even layer, creating a slight rim around the edges.
- Bake the meat layer for 25 to 30 minutes.
Potato Topping
- While the meat is baking, stir together the mashed potatoes, sour cream, half of the shredded cheddar cheese, and a pinch of salt and pepper. If the potatoes are too thick, add a splash of milk.
- Spread the mashed potato mixture evenly over the hot meat layer.
- Sprinkle the remaining cheddar cheese and crumbled bacon on top.
- Bake again for 20 to 25 minutes, or until the cheese is melted and edges are golden.
- Let it rest for 10 minutes before slicing to allow it to set.
