Loaded Potato Meatloaf

Ingredients
  

Meatloaf Base
  • 1 lb Ground beef (80/20 or 85/15) Flavorful choice for the meatloaf.
  • 1 medium Onion, finely diced Or use onion powder if in a pinch.
  • 2 cloves Garlic, minced Fresh is best, garlic powder works too.
  • 1 Eggs Helps hold the meatloaf together.
  • 1 cup Bread crumbs Plain or Italian, or crushed crackers.
  • 1/2 cup Milk Keeps the meatloaf tender, broth works too.
  • 1 tsp Salt Season to taste.
  • 1 tsp Pepper Season to taste.
  • 1 tbsp Smoked paprika Optional, for additional flavor.
Potato Topping
  • 2 cups Mashed potatoes Homemade or store-bought.
  • 1/2 cup Sour cream For a creamy texture.
  • 1 cup Cheddar cheese, shredded Sharp cheddar is preferred.
  • 1/2 cup Bacon, cooked and crumbled Optional but highly recommended.
  • 2 tbsp Green onions, chopped For garnish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large bowl, mix together the ground beef, diced onion, minced garlic, eggs, bread crumbs, milk, salt, pepper, and smoked paprika until just combined; do not overwork.
  3. Press the meat mixture into the bottom of the prepared baking dish in an even layer, creating a slight rim around the edges.
  4. Bake the meat layer for 25 to 30 minutes.
Potato Topping
  1. While the meat is baking, stir together the mashed potatoes, sour cream, half of the shredded cheddar cheese, and a pinch of salt and pepper. If the potatoes are too thick, add a splash of milk.
  2. Spread the mashed potato mixture evenly over the hot meat layer.
  3. Sprinkle the remaining cheddar cheese and crumbled bacon on top.
  4. Bake again for 20 to 25 minutes, or until the cheese is melted and edges are golden.
  5. Let it rest for 10 minutes before slicing to allow it to set.

Notes

This dish is great for leftovers and can be customized with different meats and toppings. Make ahead to save time, and consider freezing portions for later.
