  • 2 tablespoons butter For richness.
  • 1/4 cup milk A splash for creaminess.

Preparation
  1. Preheat your oven to 425°F (220°C). Scrub the potatoes, poke a few holes in them with a fork, rub with oil, and sprinkle with salt.
  2. Bake the potatoes in the oven for 45 to 60 minutes, until tender. Alternatively, microwave them for quicker prep.
  3. While the potatoes bake, cook the bacon in a skillet until crisp, then set on paper towels and chop.
  4. Once the potatoes are cool enough to handle, cut them open, scoop out the insides into a bowl, and mix with butter, milk, salt, and pepper to your preference.
Assembly
  1. Spoon the mashed potato mixture into bowls. Top with cheese immediately to allow it to melt.
  2. Add the chopped bacon, sour cream, and optional green onions or chives.
  3. For an extra melty finish, place the bowls under the broiler for 1-2 minutes, watching closely to prevent burning.

Notes

Leftover potatoes can be reheated with milk and butter for this recipe. This dish can easily be customized with various toppings and proteins. Use freshly shredded cheese for better meltability.
