Ingredients
  

Chicken Wings
  • 2 pounds 2 pounds chicken wings Split wings are easiest but whole wings work too.
Seasoning and Coating
  • 2 tablespoons 2 tablespoons lemon pepper seasoning Use a brand you like or make your own with lemon zest and black pepper.
  • 4 tablespoons 4 tablespoons butter Melted, for coating the wings.
  • 1 tablespoon 1 tablespoon garlic powder Optional, for additional flavor.
  • to taste Salt Some lemon pepper blends are already salty, so taste as you go.
  • 1 fresh 1 fresh lemon For squeezing at the end for extra brightness.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C). Line a sheet pan with foil for easy cleanup and set a wire rack on top if available.
  2. Pat the wings very dry with paper towels. Toss them in a bowl with a little oil and a light sprinkle of salt if your seasoning blend is not salty.
  3. Arrange the wings in a single layer on the wire rack.
Cooking
  1. Bake the wings for about 40 to 50 minutes, flipping halfway through, until the skin looks deeply golden and feels crisp.
  2. While the wings are baking, melt the butter in a small pan or microwave-safe bowl. Stir in the lemon pepper seasoning and a squeeze of lemon. Add garlic powder if desired.
  3. Toss the hot wings in the butter mixture right after removing them from the oven.
  4. Finish with a little extra lemon pepper on top and a final squeeze of lemon, if desired.

Notes

Ensure wings are completely dry before seasoning; this will help them get crispier. Do not drown wings in butter; a glossy coating is ideal. Use fresh lemon juice right before serving for better flavor.
