Ingredients
  

For the soup
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use homemade or good quality boxed broth
  • 2 cups cooked chicken, shredded Rotisserie chicken works great
  • 1 cup orzo pasta
  • 1 medium lemon, zested and juiced Add zest in cooking and juice at the end
  • salt to taste Season well especially with lemon
  • 1 cup fresh parsley or dill, chopped Use for garnish

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and garlic; sauté until soft and fragrant.
Cooking
  1. Pour in chicken broth and bring to a simmer.
  2. Add shredded chicken and orzo; cook until orzo is tender.
  3. Stir in lemon zest and juice; season with salt to taste.
  4. Remove from heat and stir in chopped herbs before serving.

Notes

For best results, cook orzo separately if making leftovers. Store broth and orzo in separate containers.
