  • 2 medium fresh lemons, zested and juiced Fresh lemons are essential for optimal flavor.
For the Glaze
  • 1 cup powdered sugar Add more if the glaze is too runny.
  • 2 tablespoons fresh lemon juice Use juice from the lemons you zested.

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a baking pan (8x8 inches recommended).
  2. Melt the unsalted butter and allow it to cool slightly.
  3. In a bowl, whisk together eggs, granulated sugar, lemon zest, and lemon juice.
  4. Stir in the cooled butter until combined.
  5. Add flour and salt; mix until just combined, being careful not to overmix.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until the center jiggles slightly when tapped.
Glazing
  1. Let the brownies cool for a few minutes, then prepare the glaze.
  2. Mix powdered sugar with lemon juice in a bowl until smooth.
  3. Drizzle the glaze over the warm brownies and allow it to set.

Notes

For best flavor, chill the brownies overnight before serving. Store in an airtight container for up to four days. You can also freeze them for up to a month.
