Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and lightly spray a 9x13 baking dish.
  2. Line the frozen taquitos in a single layer, fitting about 12 to 16, depending on the brand and pan.
  3. Pour the enchilada sauce over the taquitos, ensuring some sauce reaches the ends for crisp edges.
  4. If using, sprinkle black beans or corn on top of the sauce.
  5. Generously layer shredded cheese over the ingredients.
Baking
  1. Bake for 25 to 30 minutes, or until the sauce is bubbly and the cheese is fully melted.
  2. For additional browning, broil for 1 to 2 minutes, watching closely.
Serving
  1. Let the enchiladas rest for 5 minutes before serving to allow the flavors to settle.
