Ingredients
  

Basic Ingredients
  • 2 slices Bread (sourdough, white, or brioche) Any decent bread works.
  • 1 cup Cheese (cheddar and mozzarella) You can mix different cheeses depending on what you have.
  • 1/3 to 1/2 cup Kimchi Well fermented tastes best.
  • 1 tablespoon Butter or mayo For toasting.
Optional Ingredients
  • 1 teaspoon Gochujang For extra heat and sweetness.
  • 1 pinch Sugar or honey If your kimchi is super sharp.
  • 1 tablespoon Green onions For freshness.
  • 1 tablespoon Sesame seeds For a light nutty finish.

Method
 

Preparation
  1. Scoop out about 1/3 to 1/2 cup kimchi for one sandwich. Drain it, squeeze lightly, and chop it so it spreads evenly.
  2. Stir 1 teaspoon gochujang into 1 tablespoon softened butter or mayo for the spread (optional).
Cooking
  1. Spread butter or mayo on the outside of two slices of bread. On the inside, add a layer of cheese, then kimchi, then more cheese.
  2. Heat a pan over medium low heat and add the sandwich. Cook for 3 to 5 minutes per side, pressing gently with a spatula.
  3. If the bread is getting too brown before the cheese melts, lower the heat and cover the pan for 30 to 60 seconds.
  4. Let the sandwich sit for a minute before cutting to prevent the cheese from sliding out.

Notes

For best results, use medium low heat to achieve a golden crust while ensuring the cheese melts properly. Drain and chop the kimchi to keep from sogginess. Try different cheese combinations for the best melt.
