Preparation
- Scoop out about 1/3 to 1/2 cup kimchi for one sandwich. Drain it, squeeze lightly, and chop it so it spreads evenly.
- Stir 1 teaspoon gochujang into 1 tablespoon softened butter or mayo for the spread (optional).
Cooking
- Spread butter or mayo on the outside of two slices of bread. On the inside, add a layer of cheese, then kimchi, then more cheese.
- Heat a pan over medium low heat and add the sandwich. Cook for 3 to 5 minutes per side, pressing gently with a spatula.
- If the bread is getting too brown before the cheese melts, lower the heat and cover the pan for 30 to 60 seconds.
- Let the sandwich sit for a minute before cutting to prevent the cheese from sliding out.
Notes
For best results, use medium low heat to achieve a golden crust while ensuring the cheese melts properly. Drain and chop the kimchi to keep from sogginess. Try different cheese combinations for the best melt.
