Preparation
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Cream the butter and sugar until fluffy and lighter in color.
- Mix in the egg, then add lime zest and lime juice.
- In a separate bowl, whisk together flour, baking powder, and salt. Combine with the wet mixture until no dry flour remains.
Baking
- Scoop dough into small balls and place them on the prepared tray, leaving room for spreading.
- Bake for 9 to 11 minutes until the edges are set but the centers are still soft.
- Cool on the pan for 5 minutes, then transfer to a wire rack.
Glazing
- Whisk together glaze ingredients until smooth and drizzle over cooled cookies.
- Sprinkle with graham cracker crumbs if desired and let the glaze set for about 20 minutes.
