Ingredients

Main Ingredients
  • 1 large bunch kale Curly kale is classic, lacinato works too
  • 1 to 2 tablespoons olive oil Start with 1 tablespoon; add more if needed
  • to taste sea salt Start small; can add more after baking
  • to taste optional seasonings (garlic powder, smoked paprika, nutritional yeast, chili flakes) Keep seasoning light

Method

Preparation
  1. Wash and dry the kale thoroughly. Use a salad spinner and pat the leaves dry with a towel.
  2. Remove the stems and tear the leaves into chip-sized pieces.
  3. Place kale in a big bowl. Drizzle with 1 tablespoon of olive oil and massage into the leaves until slightly glossy.
Cooking
  1. Preheat oven to 300°F (150°C). Spread the kale in a single layer on a baking sheet.
  2. Bake for 15 to 22 minutes, checking at 12 to 13 minutes. Chips are done when edges feel crisp and leaves look dry.
  3. Optional: Rotate the pan and gently flip pieces halfway through baking.

Notes

Cool completely before storing to maintain crispness. Use a breathable container for short-term storage. For softened chips, reheat in the oven for a few minutes.
