Italian Herb and Cheese Bread

Ingredients
  

Dough Ingredients
  • 1 cup Warm water Not hot, to wake up the yeast.
  • 1 tablespoon Sugar Can substitute with honey.
  • 2 tablespoons Active dry yeast Instant yeast can be used as well.
  • 2 tablespoons Olive oil Melted butter can be used for a richer flavor.
  • 3 cups All purpose flour Bread flour can be used for a chewier texture.
  • 1 teaspoon Salt Essential for real bread taste.
Topping Ingredients
  • 1/4 cup Grated Parmesan Asiago can be used as an alternative.
  • 1/2 cup Shredded mozzarella Mild cheddar can be substituted, but flavor will differ.
  • 1 tablespoon Italian seasoning You can use oregano and basil as a substitute.
  • 1 teaspoon Garlic powder Optional, but recommended.
  • 1 egg Egg wash Plus a splash of water.

Method
 

Preparation
  1. In a large bowl, stir warm water, sugar, and yeast. Let it sit for 5 to 10 minutes until foamy.
  2. Add olive oil, salt, and about half the flour. Stir until a sticky batter forms.
  3. Gradually add the remaining flour until a soft, slightly tacky dough is achieved.
  4. Knead for about 8 minutes by hand or 5 minutes in a mixer until smooth and stretchy.
  5. Place the dough in an oiled bowl, cover, and let it rise until doubled (about 60 to 90 minutes).
Shaping and Rising
  1. Shape the dough into long rolls. Typically, 3 medium sub rolls work well.
  2. Place rolls on a lined baking sheet, cover lightly, and let them rise again for 30 to 45 minutes.
Baking
  1. Preheat the oven to 375 F.
  2. Mix the topping ingredients: Parmesan, mozzarella, Italian seasoning, and garlic powder.
  3. Brush the rolls with egg wash, pile on the topping, and gently press to stick.
  4. Bake for 18 to 24 minutes until golden.
  5. Cool for at least 15 minutes before slicing.

Notes

This bread pairs well with soups. Store in an airtight container for up to 2 days, or freeze for up to 2 months. To revive day-old bread, sprinkle with water and warm in the oven.
