Preparation
- In a large bowl, stir warm water, sugar, and yeast. Let it sit for 5 to 10 minutes until foamy.
- Add olive oil, salt, and about half the flour. Stir until a sticky batter forms.
- Gradually add the remaining flour until a soft, slightly tacky dough is achieved.
- Knead for about 8 minutes by hand or 5 minutes in a mixer until smooth and stretchy.
- Place the dough in an oiled bowl, cover, and let it rise until doubled (about 60 to 90 minutes).
Shaping and Rising
- Shape the dough into long rolls. Typically, 3 medium sub rolls work well.
- Place rolls on a lined baking sheet, cover lightly, and let them rise again for 30 to 45 minutes.
Baking
- Preheat the oven to 375 F.
- Mix the topping ingredients: Parmesan, mozzarella, Italian seasoning, and garlic powder.
- Brush the rolls with egg wash, pile on the topping, and gently press to stick.
- Bake for 18 to 24 minutes until golden.
- Cool for at least 15 minutes before slicing.
Notes
This bread pairs well with soups. Store in an airtight container for up to 2 days, or freeze for up to 2 months. To revive day-old bread, sprinkle with water and warm in the oven.
