Ingredients
  

Main Ingredients
  • 1-2 racks baby back ribs About 2 to 4 pounds total
  • to taste Salt
  • to taste Pepper
  • 1 cup liquid (apple juice, chicken broth, or water)
  • 2 tablespoons apple cider vinegar Optional but recommended
  • 1 cup BBQ sauce For brushing at the end

Method
 

Preparation
  1. Peel off the membrane on the back of the ribs using a butter knife and paper towel.
  2. Cut the racks into sections of 3 to 4 ribs to fit in the pot.
  3. Season the ribs with salt, pepper, and a generous layer of dry rub on both sides.
Cooking
  1. Pour the liquid (apple juice and vinegar) into the Instant Pot and add the trivet.
  2. Stack the rib sections on edge in a circle within the pot.
  3. Cook on High Pressure for 23 to 28 minutes depending on thickness, naturally release for 10 minutes, then quick release for the rest.
  4. Carefully lift the ribs out using tongs and support them from underneath.
  5. Brush with BBQ sauce and finish under the broiler for 3 to 6 minutes until sticky.

Notes

For tender yet sliceable ribs, cook for 25 minutes. For softer, deeper flavor, cook 28-30 minutes. Always use enough liquid to create steam.
