  • 2 lbs boneless, skinless chicken thighs Chicken breasts can be used if needed.
  • 1/3 cup mild honey Any honey from a squeeze bottle works.
  • 1/3 cup low-sodium soy sauce Avoid high-sodium varieties.
  • 4-5 cloves garlic, minced or pressed Fresh garlic is preferred for better flavor.
  • 2 tablespoons ketchup Adds a hint of tang.
  • 1-2 tablespoons cornstarch Optional for thickening the sauce.
  • 2 tablespoons water Used in the sauce and for thickening if needed.
  • to taste Salt and pepper Add according to preference.
  • to taste Dried chili Optional for spice lovers.

Method
 

Preparation
  1. Thaw the chicken if frozen, or you can use it frozen.
  2. Add chicken to the Instant Pot.
  3. Drizzle honey, soy sauce, ketchup, and minced garlic over the chicken.
  4. Stir the mixture until everything is well combined.
Cooking
  1. Seal the lid on the Instant Pot and set it to high pressure for 8-10 minutes.
  2. Allow a natural release for a few minutes after cooking.
  3. If the sauce is too thin, use the sauté function to simmer it for a minute until it thickens.

Notes

For an extra flavor boost, sauté onions in the Instant Pot before adding the other ingredients. For thicker sauce, add more cornstarch mixed with water as needed.
