  • 8 oz Imitation crab, chopped or shredded Choose a decent quality for best taste.
  • 1/2 cup Mayonnaise Can substitute half with plain Greek yogurt.
  • 1/4 cup Sour cream or plain yogurt Optional for extra creaminess.
  • 1 tbsp Lemon juice Fresh lemon juice is best.
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Celery, finely chopped For a crunchy texture.
  • 1/4 cup Green onion or red onion, thinly sliced
Optional Additions
  • 1 cup Diced cucumber For lunch packing.
  • 1/2 cup Sweet corn For added sweetness.
  • 1/4 cup Diced bell pepper For color in gatherings.
  • 1 tsp Sugar Optional, to enhance sweetness.
  • 1 tbsp Sweet pickle relish Optional for sweetness.

Method
 

Preparation
  1. Mix mayonnaise, lemon juice, salt, and pepper in a bowl.
  2. Gently fold in the imitation crab, celery, and onion.
  3. If using optional additions, fold them in gradually.
Serving
  1. Chill the salad for at least 20-30 minutes before serving to blend flavors.
  2. Serve on crackers, in pita bread, or over mixed greens.

Notes

For leftovers, store in an airtight container in the fridge. Best consumed within 2-3 days. Avoid freezing due to texture changes. For packing, use an ice pack to keep cold.
