Preparation
- Warm the salsa in a small pan over medium-low heat, stirring occasionally.
- If using beans, warm them in a pan or microwave.
Cooking
- Warm or crisp the tortillas in a dry skillet for about 20 seconds per side or lightly crisp them with oil.
- In a skillet, heat oil or butter, crack the eggs, and cook until whites are set and yolks are runny.
Assembly
- Layer the plate: place the tortilla first, then beans (if using), followed by the eggs and warm salsa.
- Add cheese and toppings, then finish with a squeeze of lime.
- Serve immediately while hot.
Notes
Best served fresh, but salsa and beans can be made ahead and stored in the fridge. Keep toppings prepared in advance for a quicker assembly.
