Ingredients
  

Main Ingredients
  • 4 corn tortillas Corn tortillas 2 per person if you are hungry
  • 2 eggs Eggs 1 to 2 per person
  • 1 cup Salsa Store bought or quick homemade salsa
  • 1 cup Refried beans or black beans Optional but very filling
  • 1 tablespoon Oil or butter For frying eggs and warming tortillas
  • to taste Salt and pepper
  • 1/2 cup Cheese Cotija, cheddar, or Monterey Jack (optional)
Toppings
  • Avocado
  • Cilantro
  • Sliced jalapeno
  • Lime wedges
  • Hot sauce

Method
 

Preparation
  1. Warm the salsa in a small pan over medium-low heat, stirring occasionally.
  2. If using beans, warm them in a pan or microwave.
Cooking
  1. Warm or crisp the tortillas in a dry skillet for about 20 seconds per side or lightly crisp them with oil.
  2. In a skillet, heat oil or butter, crack the eggs, and cook until whites are set and yolks are runny.
Assembly
  1. Layer the plate: place the tortilla first, then beans (if using), followed by the eggs and warm salsa.
  2. Add cheese and toppings, then finish with a squeeze of lime.
  3. Serve immediately while hot.

Notes

Best served fresh, but salsa and beans can be made ahead and stored in the fridge. Keep toppings prepared in advance for a quicker assembly.
