  • 1 lb Whole carrots, peeled and cut Or bagged baby carrots in a pinch.
  • 3 tbsp Hot honey Store bought or homemade.
  • 2 tbsp Olive oil Helps with roasting and caramelizing.
  • 1 tsp Salt Brings out the natural sweetness.
  • 1 tsp Black pepper Adds a gentle bite.
  • 1 tsp Garlic powder Optional.
  • 1/2 tsp Red pepper flakes Optional for extra kick.
  • 1 tbsp Lemon juice Or a tiny splash of apple cider vinegar for a bright finish.
  • 1 tbsp Fresh herbs (parsley or thyme) Optional for garnish.

Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. Peel and cut the carrots into sticks on a slight diagonal, keeping them close in size for even cooking.
  3. Toss the carrots with olive oil, salt, pepper, and garlic powder (if using). Spread them out in a single layer on a lined sheet pan.
Roasting
  1. Roast the carrots for 18 to 25 minutes, flipping them halfway through, until they are fork-tender with golden spots.
  2. Drizzle hot honey over the carrots and toss right on the pan. Roast for an additional 3 to 6 minutes until the honey gets glossy and clings to the carrots.
  3. Finish by squeezing lemon juice or adding a tiny splash of vinegar. Taste and adjust with more salt if needed.

Notes

Do not add hot honey too early to avoid burning. Use a large enough pan for even roasting and a good texture. Adjust spice level according to your preference.
