Hot Honey Brussels Sprouts

These crispy, sweet, and spicy Brussels sprouts are the perfect veggie side that will make you forget you're eating your greens. Roasted to perfection, they're sweetened with hot honey and finished with a splash of acid for a delightful flavor.

Ingredients
  

Main ingredients
  • 1 lb Brussels sprouts, trimmed and halved Quarter large sprouts for even cooking.
  • 2 tbsp Olive oil Avocado oil works as a substitute.
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Hot honey Store bought or homemade.
  • 1 tsp Garlic powder Alternatively, use 1 minced garlic clove.
  • 1 tbsp Apple cider vinegar or lemon juice A tiny splash for brightness.
  • 1/4 tsp Red pepper flakes Optional for extra heat.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and place a large sheet pan in the oven to heat.
  2. Trim the sprouts and slice in half through the stem. If they are very large, quarter them.
  3. In a bowl, toss the sprouts with olive oil, salt, pepper, and garlic powder if using.
Roasting
  1. Spread the sprouts on the hot pan in a single layer, cut sides down.
  2. Roast for 18 to 22 minutes, until they are deeply browned on the bottom and fork tender.
  3. Remove the pan from the oven, drizzle hot honey over the sprouts, and toss quickly.
  4. Return to the oven for another 3 to 6 minutes to allow the hot honey to caramelize.
Finishing Touches
  1. Finish with a small splash of apple cider vinegar or lemon juice and another tiny pinch of salt if needed.
  2. Serve warm while the edges are still crispy.

Notes

The sprouts get soggy if they are crowded. Ensure they are dry before roasting and add hot honey near the end to prevent burning.
