Ingredients
  

For the Base
  • 1 cup Long grain white rice (uncooked) Rinse quickly before soaking.
  • 2 sticks Cinnamon sticks Plus a pinch more ground cinnamon if desired.
  • 5 cups Water For soaking the rice.
For Flavor
  • 2 cups Milk, evaporated milk, or almond milk Adjust based on preference.
  • 1/2 cup Sugar Or condensed milk for a richer taste.
  • 1 teaspoon Vanilla extract Optional, add at the end.

Method
 

Preparation
  1. Rinse the rice quickly to avoid a dusty taste.
  2. Soak the rice with cinnamon sticks in water for at least 6 hours, ideally overnight.
Blending and Straining
  1. Blend everything until it looks milky and the cinnamon is well broken down.
  2. Strain through a fine mesh strainer or cheesecloth, taking your time for a smooth texture.
Final Touches
  1. Stir in the milk and sweetener, then chill in the refrigerator before serving.

Notes

Horchata should be served cold. It is best consumed within 2 to 3 days. Expect separation; just stir or shake before serving. Use a sealed container to avoid fridge odors.
