  • 4 cups broccoli florets, chopped Fresh, raw broccoli is preferred.
  • 2 cups Honeycrisp apples, diced Can substitute with Gala or Fuji apples if necessary.
  • 1 cup almonds, sliced Can substitute with sunflower seeds or other nuts.
  • 1/2 cup bacon, crumbled Optional, can be substituted with roasted pepitas.
  • 1/2 cup dried cranberries Optional, adds a sweet pop.
Dressing Ingredients
  • 1/2 cup mayo Can be light mayo or Greek yogurt for a lighter dressing.
  • 2 tablespoons apple cider vinegar Provides tanginess to the dressing.
  • 1 tablespoon honey For sweetness.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon black pepper Adjust to taste.

Method
 

Preparation
  1. In a large bowl, combine broccoli florets, diced Honeycrisp apples, sliced almonds, crumbled bacon, and dried cranberries.
  2. In a separate bowl, whisk together mayo, apple cider vinegar, honey, salt, and black pepper until smooth.
  3. Pour the dressing over the salad ingredients and toss until well coated.
  4. Chill in the refrigerator for at least 20 minutes to allow flavors to meld.

Notes

To store leftovers, use an airtight container and refrigerate. Salad stays fresh for up to 3 days. Keep apples separate until ready to serve to prevent browning. Great for meal prep, as broccoli does not wilt easily. Variations can include different cheeses or additional greens.
