  • 6 cups Rice cereal like Rice Krispies
  • 10 ounces Mini marshmallows Plus an extra handful for added gooeyness
  • 4 tablespoons Butter
  • 1 teaspoon Vanilla extract Optional but enhances flavor
  • 1 pinch Salt Optional, helps balance sweetness
Coating and decoration
  • to taste White candy melts or white chocolate For coating
  • to taste Mini chocolate chips or black icing pen For ghost faces
  • to taste Nonstick spray or extra butter For greasing the pan and hands

  • 1 Ghost cookie cutter or paper ghost template For shaping the treats

Method
 

Preparation
  1. Spray a 9x13 pan lightly with nonstick spray or line it with parchment paper.
  2. In a large pot over low heat, melt the butter.
  3. Add mini marshmallows and stir until completely melted and smooth.
  4. Turn off the heat and stir in vanilla extract and salt, if using.
  5. Pour in the rice cereal and gently stir until all pieces are coated.
  6. Scoop the mixture into the prepared pan and lightly press down using buttered hands or parchment paper.
  7. Let the mixture cool for about 30 to 45 minutes.
Cutting and Decorating
  1. Once cooled, lift the slab out and cut into ghost shapes using a cookie cutter or template.
  2. Melt the white candy melts or white chocolate in the microwave in short bursts, stirring in between.
  3. Dip the tops of each ghost into the melted coating or drizzle it over them, allowing excess to drip off.
  4. While the coating is still tacky, press mini chocolate chips into each ghost for eyes and use icing for mouths.
  5. Let the coating set completely before serving.

Notes

Keep the heat low while melting marshmallows to avoid hard treats. Store in an airtight container at room temperature for best freshness.
