Ingredients

Main Ingredients
  • 1 cup Water
  • 8 tablespoons Unsalted butter, cut into chunks
  • 1/4 teaspoon Salt
  • 1 teaspoon Sugar (optional) Adds a touch of sweetness
  • 1 cup All-purpose flour
  • 4 large Eggs (room temperature) Helps the dough mix smoothly

Method

Prepare the Dough
  1. In a medium pot, combine water, butter, salt, and sugar. Heat until the butter melts and the mixture just starts to simmer.
  2. Remove from heat and add flour all at once. Stir vigorously with a wooden spoon until it forms a smooth ball.
  3. Return pot to low heat and stir for about 1 to 2 minutes to dry out the dough slightly.
  4. Transfer the dough to a bowl and let it cool for about 5 minutes.
  5. Add eggs one at a time, mixing well after each addition until the dough is smooth and thick and falls in a slow ribbon from the spoon.
Bake the Puffs
  1. Scoop or pipe mounds of dough onto a lined sheet pan, about 1.5 inches wide. Leave space between them.
  2. Bake in a preheated oven at 400°F for 25 to 30 minutes until golden.
  3. Do not open the oven during baking. Once golden, turn off the oven, crack the door, and let sit for 5 minutes.
Decorate the Puffs
  1. Prepare an orange glaze by mixing powdered sugar with a little milk until thick and add orange food coloring.
  2. Dip tops of cooled puffs into the glaze and set them on a rack.
  3. Melt chocolate chips and pipe on faces or use a black icing pen.
  4. Press a small piece of green candy or fruit leather onto the top for a stem.

Notes

For best results, use room temperature eggs, avoid opening the oven, and let puffs cool completely before filling. You can bake the puffs ahead and fill them closer to serving time.
