Ingredients

Main Ingredients
  • 12 large eggs Use older eggs for easier peeling.
  • 1/3 cup mayonnaise Add more if needed for creaminess.
  • 1-2 teaspoons yellow mustard Can substitute with Dijon.
  • 1 teaspoon vinegar or pickle juice Avoid excess to prevent wateriness.
  • Salt and black pepper To taste.
  • Paprika For color and a smoky vibe.
Halloween Toppings
  • Black olives For spiders or pupils.
  • Green olives or sliced jalapenos For monster eyes.
  • Chives For worms or messy grass.
  • Sriracha or hot sauce For a creepy red streak.
  • Everything bagel seasoning For a darker speckled look.

Method

Preparation
  1. Hard boil the eggs by placing them in a pot, covering with cold water by an inch, bringing to a gentle boil, then turning off the heat and letting them sit covered for 10-12 minutes. Drain and move them into cold water to cool.
  2. Once eggs are cool, peel and slice in half lengthwise. Pop the yolks into a bowl and set the whites on a platter.
  3. Mash the yolks with mayonnaise, yellow mustard, vinegar or pickle juice, salt, and pepper until creamy. If it feels stiff, add a tiny bit more mayonnaise.
Assembly
  1. Spoon the filling into the egg whites or use a zip-top bag with the corner snipped off for a DIY piping bag. It doesn't have to be perfect; the toppings will distract from any imperfections.
  2. Add the Halloween toppings as desired, such as paprika, chives, olives, or sriracha.
  3. Chill the filled eggs in the fridge for at least 20 minutes before serving.

Notes

These deviled eggs are naturally gluten-free, budget-friendly, and can be made ahead of time to enhance their flavor. Store until serving and don’t leave unrefrigerated for more than 2 hours.
