Ingredients
  

For the grilled pineapple
  • 1 whole fresh pineapple, peeled, cored, and sliced Cut into rings or long planks
  • 1 tablespoon neutral oil For oiling the grill grates
Optional toppings/sweeteners
  • 2 tablespoons brown sugar Use only if the pineapple is not very ripe
  • 1 teaspoon cinnamon For added flavor
  • 1 tablespoon honey To brush after grilling (optional)
  • 1 tablespoon lime juice For brushing after grilling (optional)
  • a pinch salt To enhance flavor
  • 1 cup vanilla ice cream For serving (optional)
  • 1/2 cup toasted coconut For serving (optional)
  • 1/2 cup chopped nuts For serving (optional)

Method
 

Preparation
  1. Preheat your grill to medium high. If you can hold your hand above it for only a couple of seconds, it is hot enough.
  2. Lightly oil the grill grates with a paper towel dipped in neutral oil.
  3. Slice the fresh pineapple into rings or long planks.
Grilling
  1. Place pineapple slices on the grill in a single layer.
  2. Grill the slices for about 2 to 4 minutes per side until grill marks appear and the color deepens.
  3. Remove from the grill and serve warm.

Notes

Let the pineapple sit on the grill for a bit before flipping to achieve caramelization. Serve grilled pineapple with ice cream, yogurt, or as a side to BBQ dishes. Store grilled pineapple in the fridge for 3 to 4 days.
